Tropical Grilled Chicken Wings with Mango Pineapple Salsa

Every once in awhile no matter what the weather is we need a little taste of the tropics. Here's a good go-to mango salsa recipe:
Whip up this mango pineapple salsa recipe to serve it with grilled chicken, fish, tacos or great for a snack with tortilla chips.
*** Prep time does not include marinating the wings for 4 hours to overnight ****

Wings
4 lbs chicken "party" wings (drumettes)
½ tsp black pepper
1 tbsp mustarda variety is available in-store
1 can of Coke or Pepsi soda
Gilled Mango Pineapple Salsa
1 pineapple- peeled, cored and sliced
½ sweet onion, chopped
2 large mangos, peeled and chopped
1 Roma tomato, chopped
½ cup fresh cilantro, chopped
¾ tsp salt
¾ tsp lime zest
3 tbsp fresh squeezed lime juice
Wings
1Combine soy sauce, balsamic, pepper, olive oil, soda from can and wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight.
2Preheat an outdoor grill for medium heat.
3Remove the chicken wings from the marinade and pat dry.
4Cook the wings on the preheated grill, turning occasionally, until the chicken is well browned and no longer pink, 25 to 30 minutes.
Grilled Mango Pineapple Salsa
5Preheat grill to medium-high heat (350° to 400°).
6Grill pineapple and onion 5 minutes or until well-marked but not cooked through.
7Chop and place in a large bowl.
8Whisk together the Chipotle Infused Olive Oil and Mango White Balsamic Vinegar.
9Toss in mangoes, pineapple, and remaining ingredients. Cover and chill.
10Can be refrigerated up to 3 days.
