This Tortellini Salad is an easy and flavorful cold pasta salad made with tortellini, olives, pepperoni, cherry tomatoes, cucumbers and provolone cheese. Our Tuscan Herb Olive Oil and Sicilian Lemon White Balsamic are the flavour ingredients for vinaigrette in this salad recipe. Add grilled chicken to the salad for a main dish.
It makes a colourful & delicious dish to take to dinner parties and bbqs. Perfect for picnics too.

 9 oz package of cheese tortellini
 ½ lb pepperoni mini pepperoni or chopped
 ½ lb provolone cheese chopped in small squares
 6 oz can of black olives, sliced
 1 pack of cherry tomatoes, sliced
 2 cucumbers, chopped
 ¼ cup "Olive the Best" Tuscan Herb Olive Oil
  cup "Olive the Best" Sicilian Lemon White Balsamic
 ground black pepper and sea salt to taste** or leave out the salt and add anchovies for a little zing of flavour

Boil water in a large pot of lightly salted water. Cook tortellini at a boil; drain.

Rinse tortellini with cold water until completely cooled; drain and transfer to a large bowl.

In a separate bowl mix – Sicilian Lemon White Balsamic with Tuscan Herb and set aside.

Stir tortellini pasta, pepperoni (or ham), shredded or chopped provolone cheese, black olives, cherry tomatoes, cucumbers, sliced pepperoncini peppers, Sicilian Lemon Balsamic & Tuscan Herb dressing salt & black pepper to taste.
