Nothing feels like summer as much as a freshly harvested tomatoes and cucumbers cut up up into a cool, refreshing flavourful salad.
2 tbsp Olive the Best Ultra Premium Extra Virgin Robust Olive Oil
2 tbsp Olive the Best Suyo Cucumber White Balsamic Vinegar
1 garlic clove
salt and pepper
1 English cucumber
2 cups cherry tomatoes, halved
1 tbsp fresh dill, minced
¼ red onion, sliced thin
1 avocado, diced
feta cheese crumbles

Whisk together the olive oil, vinegar, garlic clove, salt, and pepper and let the combo sit for 5 minutes to combine the flavours.

Combine the cucumbers, cherry tomatoes, dill, and red onion (and avocado or feta cheese if using).
Toss and season with salt and pepper to taste.
