 1 cup Udon or other noodle of choice
 ¾ cup chicken, cut into cubes
 6 mushrooms, sliced
 4 mini red bell peppers
 ¾ tbsp ginger, freshly grated
 3 cloves of garlic, minced
 green onions, all parts chopped
 1 bunch of spinach, torn into smaller pieces
 1 cup basil, chopped small
 sesame seeds, optional
Stir Fry Sauce
 2 ½ tbsp Tahini sauce
 2 ½ tbsp oyster sauce
 2 tbsp maple syrup

Cook noodles to the package directions.

Drain, rinse with cold water and lightly drizzle with mild olive oil and toss to prevent the noodles from sticking together. Set it aside.

Place 2 tablespoons mild olive oil in a skillet on medium-high heat.

When the pans hot, add the mushrooms and cook until they turn deeply golden brown (about 10 minutes)

Add chicken to the mushrooms and cook until meat looks cooked and the mushrooms look caramelized - another 5 minutes.

While the mushrooms are cooking, mix the stir fry sauce ingredients together

Add the sliced mini bell peppers, ginger, garlic and green onions to the mushrooms and cook another 2 minutes.

Add the stir fry sauce and simmer for another minute.

Add the noodles, spinach and basil. Stir

Add sesame seeds and remaining green onion to garnish and serve.
