2 bacon sliced, chopped
2 lbs ground beef
1 large onion, finely chopped
1 red pepper, diced
3 cloves garlic, finely minced
1 tbsp chili powder
2 tbsp cumin
1 tsp oregano
2 tsp paprika
½ tsp ground coriander
salt to taste
1 ½ lbs fresh tomatoes, diced
1 cup beef broth
2 cups assorted canned beans (kidney, black, pinto, chickpea, etc - your choice)
2 cups canned corn, drained
sour cream, scallions, cheddar cheese, cilantro -- optional garnish
1Fry the bacon over high heat until just brown and slightly crispy.
2Scoop the bacon out with a slotted spoon and set aside on a paper towel to drain.
3Add ground beef to the pan and brown then transfer to a dish.
4Drain the fat in the pan and add the Chipotle Olive Oil.
5Reduce the heat to medium and reduce the heat to medium and cook the onion and garlic until it's translucent.
Add the red peppers and cook until they become soft, about 2 minutes.
6Stir in all the spices including a little salt to taste and cook until fragrant.
7Add the diced tomatoes and stir for a moment.
8Now add the broth, the browned beef, bacon, beans, corn and Chocolate Balsamic.
9Bring to a boil then reduce to a simmer.
10Cook for 40 minutes or more.
11Top with shredded cheddar, sour cream, scallions or other favourite toppings --- and share.
