Basil, Strawberry, Lemongrass-Mint Salad Dressing

A dressing that has a fresh and flavourful combination of Olive the Best's Thai Lemon-Grass Mint white balsamic, Basil olive oil and Strawberry dark balsamic.
Especially good with spinach feta cheese, nuts and strawberries as a salad but you can dress it over poultry or meats as well.

1 cup fresh strawberries
1 cup Olive the Best Basil Olive Oil
2 tbsp Olive the Best Lemongrass Mint White Balsamic Vinegar
1 tbsp Olive the Best Strawberry Dark Balsamic Vinegar
1 tbsp dijon mustard
1 tbsp garlic, minced
½ lemon, juiced and zested
1 tbsp mint leaves
½ tsp sea salt
¼ tsp fresh ground pepper if you like
Preparing the Strawberries
1Rinse strawberries, remove the stem but leave whole.
You can decide to use the strawberries fresh as well but if you would like to roast them, here's what you do:
2Preheat oven to 325 degrees.
3Place whole strawberries on a baking sheet and roast approximately 15 minutes.
(or you can toss whole strawberries in small amount of basil olive oil and grill them on BBQ)
4Remove them from the grill or oven and cool.
Preparing the Dressing
5Place all ingredients, except olive oil, into a blender or food processor and puree until smooth.
6With blender/processor on low, very gradually drizzle in the olive oil to emulsify. Adjust seasoning as needed.
7Serve immediately over greens and store left-over dressing in fridge up to 2-3 days.
