If you're looking for a special cake to serve company for tea or dessert, try this delicious olive oil cake featuring our Elderflower White Balsamic and Lemon Olive Oil.
1 ½ cups all purpose flour
2 tsp baking powder
½ tsp salt
½ cup granulated sugar
1 egg white
3 eggs
½ cup low-fat milk
¾ cup Olive the Best Lemon Fused Olive Oil
2 tbsp Olive the Best Elderflower White Balsamic Vinegar
1 tbsp lemon zest
½ cup powdered sugar - for dusting

Preheat oven to 350 degrees F.

On medium speed, mix sugar and eggs until fluffy then gradually add lemon olive oil, lemon zest, elderflower white balsamic, and milk.

Sift flour in a separate container, add salt and baking powder and set aside.

Fold wet and dry ingredients and combine in a small square pan.

Bake for 35-40 minutes until golden brown.

Once cooled dust with powdered sugar and serve.

What size of pan should this be baked in?

I’m sorry we missed seeing your comment on the recipe. The Elderflower-Lemon Oil Cake is quite a delicious flavour combination. You will have to use a fairly small pan for this if I remember correctly. I’ve updated the recipe to use a small square pan. Daniela
I didn’t have Elderflower white balsamic vinegar so I substituted Pink Guava rose balsamic vinegar. It was fabulous!
