This cut of beef has been referred to by a variety of names including "Newport steak,"(interestingly by a butcher / restaurateur), "Santa Maria steak," "Triangle tip," and "Triangle steak." Most of those origins seem to be in California.
Whatever you call it, when cooked right it can be juicy tidbits of beef. Try this on with a salad or veggies. A flavour that cannot be compared using Olive the Best Blackberry-Ginger Dark Balsamic, Neopolitan Herb Balsamic and a little bit of our EVOO.

34 lbs Tri-Tip Roast
½ cup "Olive the Best" Blackberry Ginger Balsamic Vinegar
¼ cup "Olive the Best" Neapolitan Herb Balsamic Vinegar
¼ cup Infusion Premium Foods soy sauce
2 tbsp Ultra Premium EVOO (like Picual)
2 garlic cloves, crushed
½ tsp black pepper
1Combine; soy sauce, Neapolitan Herb Balsamic Vinegar, Blackberry - Ginger Balsamic Vinegar, Chilean Picual EVOO, crushed garlic cloves, and black pepper in a zip-top bag add tri-tip
2Marinate in the refrigerator for at least 12 hours.
3Remove the meat from the marinade, let sit 40 minutes.
4Smoke, grill or broil until cooked to your desired degree of doneness.
