 4 cups mixed greens (romain, arugula, spinach, or spring mix)
 2 tbsp Herbs de Provence Olive Oil (plus more for grilling)
 3 ripe or jar peaches, halved and pitted
 1 cup cucumber, thinly sliced or halved
 1 carrot, thinly sliced or ribboned
 3 tbsp Mango White Balsamic
 1 cup feta cheese, cubed or crumbled
 ½ cup pistachio, candies walnut or toasted pecan
 salt and peper to taste
 fresh basil for garnish (optional)

Directions

Grill the peaches: Lightly brush peach halves with Herbs de Provence Olive Oil. Place cut-side down on a hot grill or grill pan for 2–3 minutes until caramelized. Slice into wedges.

Make the dressing: In a small bowl, whisk together Mango White Balsamic, 1 Tbsp Herbs de Provence Olive Oil, salt, and pepper.

Assemble the salad: On a large platter, layer mixed greens, cucumber, carrot ribbons, grilled peaches, feta, and nuts.
